Here’s a very patriotic take on the ice cream sandwich from Kerry Soraci at iScream Cakes.
Red, White and Blue Ice Cream Pie
– Pre-made chocolate cookie or graham cracker crust – or better yet, bake some chocolate chip cookie dough (pressed thin) into a pie tin, let cool
– 1 or 2 pints of softened (but not melted) Organic Vanilla Bean Ice Cream
– Fresh blueberries and strawberries
Press and smooth ice cream into crust, then freeze for a couple of hours. Top with berries when ready to serve/present (or top with strawberry amaretto sauce (see below) and fresh blueberries!)
1 Pint fresh, cleaned, hulled, chopped strawberries
1/4 Cup sugar
1 Tsp. balsamic vinegar
2 Tbsp. amaretto
Bring berries, sugar and balsamic to a boil, reduce heat and simmer for 10 minutes. Add amaretto (2T or to taste) and simmer for 3-5 minutes (less for more alcohol taste, more for less). Transfer to a bowl, chill and serve over pie.
